Marinated
Artichokes

Ingredients:

(14 oz.) cans artichoke bottoms, undrained |

tablespoons lemon juice |

teaspoon sugar |

teaspoon dried whole oregano, crushed |

teaspoon dried whole tarragon, crushed |

Dash
of garlic powder |

Radicchio
leaves (optional) |
Drain
artichokes, reserving liquid. Quarter artichokes and set
aside.
Combine reserve liquid, lemon juice, and next 4 ingredients;
stir well. Add artichokes, tossing gently to combine. Cover
and marinate in refrigerator for at least 8 hours; stir
occasionally.
Drain artichokes, and arrange on a bed of radicchio leaves,
if desired.
