Orange-Ginger Carrots
Ingredients:
| • | Vegetable cooking spray |
| • | 1 teaspoon reduced calorie margarine |
| • | 1 pound carrots, scraped and cut into thin strips |
| • | 2 tablespoons unsweetened orange juice |
| • | 1 teaspoon brown sugar |
| • | _ teaspoon ground ginger |
| • | 1/8 teaspoon salt |
| • | Dash of pepper |
| • | 1 _ teaspoons sesame seeds, toasted |
Coat a large non-stick
skillet with cooking spray. Add margarine; place over medium heat until margarine
melts. Add carrots; sauté 8 minutes or until crisp-tender.
Add orange juice and next 5 ingredients (orange juice through pepper); cook
over medium-low heat 8 to 10 minutes or until carrots are tender, stirring occasionally.
Transfer mixture to a serving bowl; sprinkle with sesame seeds; toss gently.
